Corn Bread Sloppy Joes

This delicious recipe comes from Melanie.

I have made something similar to these and I love them! In fact, I will probably make them this week. I have PLENTY of Martha White Cornbread in stock!

Corn Bread Sloppy Joes
.
Ingredients:
* Corn Bread- I use Martha White packets, but you can make home-made or buy Jiffy Box mixes, etc.
*Approximately 1 pound ground beef (I have used ground turkey and even ground deer in place of this.)
*1/2 cup chopped onion
*1 can sloppy joe mix (or spaghetti sauce and sloppy joe mix packet)
*Cheddar cheese
*Vegetables (I like adding corn, some black beans, green peppers, etc.)

Directions:
1) Make corn bread.
2) Brown meat and onion in skillet.
3) Drain.
4) Stir in sloppy joe mix/sauce and vegetables - I let this heat to a slow boil and then turn it down and simmer it for about 7-10 minutes.
5) Sprinkle with cheese and let it sit for a moment to let the cheese melt. Scoop onto corn bread.

Mmmmm... Would probably be yummy baked as a casserole (ala Shepherd's Pie) with the meat mixture on the bottom and the cornbread batter baked on top.
