Super Easy Enchilada Casserole

Super Easy Enchilada Casserole

1 Pound Lean Ground Beef
1 19 oz can Enchilada Sauce
1 Diced Onion
Chili Powder and Garlic Powder to taste
Pack of Corn or Flour Tortilla's whatever your preference
2 cups of cheddar cheese or Mexican blend

Brown ground beef and Onions together, throw a few dashes of garlic powder in. Let cook together until onions are tender. Drain beef if necessary. Add meat back to pan. Then add the can of enchilada sauce to meat mixture. Add chili powder for extra zip. Then let simmer for a few minutes to incorporate flavors.

Pre heat oven to 350. Start assembling by putting a small amount of meat/sauce mixture on bottom of a casserole dish so that first layer of tortillas doesn't burn/stick. Then put a layer of tortillas, meat mixture, cheese......repeat. Last layer should be cheese so it is nice and melted and bubbly when it is done.

Bake for 15 to 20 minutes or until cheese is melted.

Make sure to have guacamole and sour cream as toppers if desired.

Enjoy!
Thanks, Amy.
