Playgroup Surprise

This yummy recipe is from my friend Jana. She made it at my baby shower last month. My mouth waters just thinking about it.

Playgroup Surprise
1 box of graham crackers
2 packages of Vanilla Instant Pudding
3 cups cold milk
12 oz Cool Whip
1 container chocolate icing
Combine milk and dry pudding. Beat with whisk. Add Cool whip. Place a layer of cracker on the bottom of a 9 x 13 pan. Put 1/2 of pudding mixture on top of crackers. Place another layer of crackers on top and then layer remaining pudding mixture on crackers. Place last layer of crackers on top. Microwave icing for 1 minute on high. Pour icing on top of crackers. Refrigerate 4 hours or overnight. Enjoy!

We call this Eclair Cake and make homemade chocolate frosting instaed of canned. Either works, depends on what you have on hand. We also use French Vanilla flavored pudding. Leave it to use Southerners to make it even more decadent:) Frosting:
2 c powdered sugar
3 Tbs white Karo syrup
4 Tbs melted butter (of course)
2 oz unsweetened chocolate
2 teasp vanilla
4 Tbs milk
Mix it all together and pout over the pudding/graham cracker layers. YUM!

we call it chocolate Eclair- my sister makes this every year at christmas time. so yummy and easy to make. thanks!
